Wine making
Grapes are harvested and placed in a box, crushed and destemmed. Then they undergo a process of cold maceration: the most is kept in contact with the skins for 24 hours at a temperature of 2°C. Subsequently the most is separated from the skins through soft pressing and after static cold decantation, alcoholic fermentation is commenced at a controlled temperature of 16/18° C. This process allows to obtain a better removal of the skins enhancing the aroma of this grape variety.
