Wine making
Grapes are destemmed and crushed. The must is separated from the skins, through soft pressing. Crushing is a decisive element to keep product freshness and aroma. For the production of Pignoletto Sparkling Wine, specifically, only the noblest parts of the most, obtained at the beginning of crushing, are used. After static cold decantation, most alcoholic fermentation is commenced at a controlled temperature of 15/16° C. The so-called “prise de mousse” then takes place in autoclave for 40 days, with a maximum pressure of 5,5 atm. The sparkling wine thus obtained is aged for further 6 months on the yeast which caused re-fermentation. During this phase selected yeast is used to obtain the aromatic and taste characteristics which distinguish all the great sparkling wines.

Lively sparkling wine, finest and persistent perlage, straw yellow. The “prise de mousse” phase enhances the fruity aroma of this grape variety. Dry, fresh and lively, with fine and elegant taste.
