Wine making
Grapes are destemmed and crushed. The must is separated from the skins, through soft pressing. After static cold decantation, most alcoholic fermentation is commenced at a controlled temperature of 16/18° C. Part of the fermentation process takes place in barriques. A period of refinement on the lees then follows, through this process the wine acquires greater aroma and body.
